Our 6,5 Ha of SYRAH
are planted on very decomposed granite slopes, locally called “gore”,
among the finest in the area of the Cornas appellation.
Harvesting
is done by hand only, and usually begins mid september. It takes about
two weeks to harvest each parcel at its optimum maturity. In the cellar,
grapes are destemmed. Fermentation is carried out in small stainless
steel vats (30 to 50 hl) with temperature control and either daily
or twice daily treading. Ageing is done in casks. The duration depending
on the strength and requirements of the wine.
